DNEVI JESENSKIH JEDI

Zajadrali smo v čarobno jesen, bogato z različnimi barvnimi odtenki narave (rumeni, zeleni, rjavi, rdeči listi, ki padajo z dreves). V zraku pa je čutiti vonj po sladkem grozdju, bučah, gobah v gozdu in jabolkih iz katerih lahko pripravimo domači študelj. Ko stopamo po pisanem listju v gozdu pa vsi radi nabiramo kostanj, ki ga večina najraje zaužije pečenega.

We sailed into a magical autumn, rich in different color shades of nature (yellow, green, brown, red leaves falling from the trees). In the air you can feel the smell of sweet grapes, pumpkins, mushrooms in the forest and apples from which we can prepare homemade strudel. When we walk through the colorful leaves in the forest we all like to pick chestnuts, which most people prefer to eat roasted.

BUČNA  JUHA

Nastanek bučne juhe je povezan s praznovanjem neodvisnosti Haitija leta 1804. 1. januarja 1804 so Haitijci ustvarili juho za praznovanje svoje neodvisnosti od francoskih kolonistov. Tako se danes tradicionalno bučno juho, znano kot "soup joumou", pripravi in postreže prijateljem in družini na Haitiju v spomin na njihov boj za svobodo.

Medtem ko so bili Haitijci pod francosko kolonialno vladavino, so bili Haitijci omejeni na uživanje blage krušne juhe. Ni jim bilo dovoljeno, da so zauživali bogatih obrokov, kot je na primer juha narejena iz buč, govejega mesa in druge zelenjave. Tako je bučna juha predstavljala simbol enotnosti ob težavah in nesrečah. Postregli so jo vsem na prvem praznovanju neodvisnosti in Haitijci to tradicijo nadaljujejo še danes.

The history of pumpkin soup begins with the celebration of Haitian Independence in 1804. On 1 January, 1804, Haitians worked together to create a unique soup to celebrate their independence from the French Colonists. Today, the traditional pumpkin soup known as "soup joumou," is made and served to friends and family in Haiti in remembrance of their fight for freedom.

While under French Colonial rule, Haitians were limited to eating a bland bread soup. They would not have been permitted to eat such an extravagant meal comprised of pumpkin, beef stock and other vegetables. This unique soup was created as a symbol of unity in the face of adversity. It was served to everyone at the first Independence celebration and Haitians continue this tradition today.

GRANATNO JABOLKO

Je sočen sadež živo rdeče barve, ki premami mnoge. Plodovi granatnega jabolka dozorijo v jeseni, tako da je to priljubljen sadež v tem letnem času. Granatno jabolko je skozi zgodovino imelo velik pomen, saj je zaradi grške legende postalo simbol plodnosti, smrti in večnosti, v krščanskem svetu pa predstavlja simbol upanja.

Granatno jabolko je s prehranskega stališča zelo zanimiv sadež, saj vsebuje visoke koncentracije vitamina C, vitamina K ter folne kisline, poleg tega pa vsebuje tudi velik delež prehranske vlaknine.

50 % mase celotnega sadeža so zrnca, od česar je 10 % semen. Iz njih so začeli pridobivati olje, ki ima mnoge pozitivne lastnosti zaradi svoje sestave. Ima izjemno ugodno sestavo sladkorjev, polinenesičenih maščobnih kislin, vitaminov, polisaharidov, polifenolov in mineralov. Granatno jabolko je cenjeno predvsem zaradi linolne maščobne kisline, ki je naše telo ne more proizvajati, zato jo moramo zaužiti. Razne študije kažejo, da ima olje iz semen granatnega jabolka pozitivne učinke na metabolizem maščob in lipidov in izboljša delovanje imunskega sistema. Prav tako pa deluje antioksidativno in protivnetno.

It is a juicy, bright red fruit that tempts many. Pomegranate ripens in autumn, so it is a popular fruit at this time of year. Pomegranate has had great importance throughout history, as it has become a symbol of fertility, death and eternity due to Greek legend and in the Christian world it is a symbol of hope.

From a nutritional point of view pomegranate is a very interesting fruit, as it contains high concentrations of vitamin C, vitamin K and folic acid, and it also contains a large percentage of dietary fiber.

50 % of weight of the whole fruit are granules, of which 10 % are seeds. People began to extract oil from seeds, which has many positive properties due to its composition. It has an extremely favorable composition of sugars, polyunsaturated fatty acids, vitamins, polysaccharides, polyphenols and minerals. Pomegranate is valued mainly for its linoleic fatty acid, which our body cannot produce, so we have to consume it. Various studies show that pomegranate seed oil has positive effects on the metabolism of fats and lipids and improves the functioning of the immune system. It also acts as an antioxidant and it has anti-inflammatory efect.

KOSTANJ

V jeseni vsi radi posežemo po pečenem ali kuhanem kostanju. Ste se pa kdaj vprašali, katere so njegove pozitivne lastnosti?

Kostanj je sadež, vendar je po sestav drugačen kot ostalo sadje, saj vsebuje kar 45 % škroba. Je bogat vir vitaminov in mineralov. V Evropo je bil prinesen s Kavkaza in sicer konec 16. stoletja. Naprej so drevesa sadili za drevorede in parke, konec 19. stoletja pa je postal cenjen kot zdravilna rastlina. Iz cvetov so naredili čaj, liste pa so uporabljali proti kašlju in revmatizmu. Skorjo so pa celo uporabljali pri vročičnih obolenjih, malariji in kožnih boleznih.

Semena divjega kostanja vsebujejo escin, ki zmanjšuje poškodbe kapilar ter krepi njihove stene in ščiti pred edemi. Escin deluje zdravilno na težave povezane s kroničnim popuščanjem ven v nogah. Escin deluje tako da zniža nastanek in vpliv encimov,, ki razkrajajo notranje stene žil lasnic.

Iz kostanja lahko pripravimo kostanjevo moko ravno zaradi visoke vsebnosti škroba. Iz moke lahko pripravimo pecivo ali kruh ali naredimo kostanjev pire.

In autumn we all like to reach for roasted or boiled chestnuts. But have you ever wondered what are its positive qualities?

Chestnut is a fruit, but its composition is different from other fruits, as it contains as much as 45 % starch. It is a rich source of vitamins and minerals. Escin works by reducing the formation and impact of enzymes that break down the inner walls of hair vessels.

Chestnuts can be used to make chestnut flour precisely because of their high starch content. The flour can be used to make pastries or bread, or to make chestnut puree.
