Sefardski judje so juhi dali ime jajčno-limonina juha.

GREEK LEMON SOUP

The delicious creamy soup consists of beaten eggs and lemon mixed into a hot chicken stock. Soup has become synonym for Greek cuisine. Although this is a typical Greek dish, it originates from the Iberian Peninsula, as the recipe for the soup was brought to Greece by the Sephardic Jews. They lived in Spain until the Inquisition, when they were expelled from the country. On the way to the Ottoman Empire, the soup recipe was brought to Greece. The soup is characterized by eggs and lemons, which come directly from the agristada, i.e. egg and lemon sauce. The agristad sauce was created due to kosher dietary rules, which prohibit the use of dairy products in sauces. So they developed the agristado sauce, which contains eggs that act as a thickening agent.

Lemon gives the soup a sour taste. sometimes the juice of unripe grapes was used instead of lemon. It was only after the 10th century, when lemons became popular, that lemons began to be used instead of grapes. Lemons did not become popular until the 10th century, and since then the Greek lemon soup, which is still so popular today, was created. Sephardic Jews gave the soup the name egg-lemon soup.

Greek salad consists of tomatoes, onions, cucumbers, green peppers, feta cheese, olive oil and oregano. These are the basic ingredients that must be present in a Greek salad. Some also put bell pepper, berries and capers in it.

GREEK SALAD

The salad originates back to the 19th century when tomatoes became popular. Greek salad is well known throughout the world and is one of the most popular salads.

In the original, the Greek salad is called Horiatiki, which means peasant salad. The name is not a coincidence, because the salad contains ingredients that are available to people in the village in their gardens in the summer.

There is no lettuce or any other leafy greens in a Greek salad. Do not cut the feta cheese into cubes, but place one large piece or a few smaller pieces on the salad. Tomatoes and cucumbers are cut into large pieces, not small ones. Traditional Greek salad does not contain red pepper. The salad is served with bread. The salad is served in a shallow bowl, not a deep one.

Greeks usually eat salad with every meal and with seasonal ingredients typical of a certain time of year. Thus, Greek salad is popular especially from May to September.
